  1. 400 gms Paneer
  2. For Marination
  3. 5 tbsps Curd/ Dahi/ Yoghurt
  4. 2 tbsps Mustard oil
  5. 1/2 Tsp Black rock salt
  6. 1/2 Tsp Turmeric powder
  7. 1 Tsp Kashmiri LAL Mirch powder
  8. 1 Tsp Cummin and coriander powder
  9. 1/2 Tsp Garam masala powder
  10. 1/2 Chaat Masala powder
  11. 1/2 Tsp Black pepper powder
  12. 1/2 Tsp Ginger paste
  13. 1/2 Tsp Garlic paste
  14. For Gravy
  15. 1 Big sized onion sliced
  16. 2 inches Ginger Julienne/ chopped
  17. 2-3 inches Fresh Turmeric Julienne or chopped
  18. 8-10 Garlic chopped
  19. 1-2 Fresh Chillies (optional)
  20. 2+ 2 Tbsp Mustard oil/ veg oil
  21. 2 Medium sized Tomatoes chopped
  22. 1/2 Tsp Cummin & Coriander Powder
  23. 1/2 Tsp Kashmiri LAL Mirch powder
  24. 1/2 Tsp Garam masala powder
  25. as per taste Salt
  26. For Smokiness flavour
  27. 1 charcoal piece
  28. 1/4 tsp Ghee
  29. Garnish
  30. As required Coriander (optional)
  31. As required Fresh cream (optional)

Instructions to make to make Paneer Tikka masala

  1. Cut the paneer into cubes. Mix all the ingredients for the Marination and add in the paneer cubes, gently cover the paneer cubes with the masalas and cover and keep it in the fridge for 1-2 hours. Soak the bamboo skewers if your are using or you can use metal too whatever is available.
  2. Meanwhile, prepare the ingredients for the gravy....in a wok add about 2 tbsps of Mustard oil, once heated add the sliced onions and saute for few minutes, then add the sliced Turmeric, ginger garlic and saute more, add the tomatoes and green chillies too and a pinch or two of salt cook and saute for another 5 minutes or so. Put off the flame and let it cool. Once cooled grind it in the mixer grinder.
  3. Now put the marinated paneer in the skewers (along with onion, bell peppers and tomatoes if you prefer, my son doesn't like so I don't add) and grill it over the gas stove flame. Heat 2 tbsps of Mustard oil and add in the paste, saute and add the Cummin and coriander powder, Kashmiri LAL Mirch powder, salt as per taste and Garam masala powder and cook for another 10 minutes or so, add water as required so that it doesn't burn. Cook till the oil seperates, add in the grilled paneer.
  4. Add hot water and adjust the consistency of the gravy as desired (I love dry kind). Once ready, place a steel bowl or an aluminium foil (shape it like a bowl) on top of the paneer, burn a piece of charcoal and place it in the bowl and add ghee to it for Smokiness, cover the kadai with a lid for about 5-10 minutes. Serve the Paneer Tikka masala with Roti / flat bread of your choice. Bon appetite!
