Ingredients and spices that need to be Make ready to make Malai Kofta:

  1. For Kofta...
  2. 2 cup paneer,
  3. 1 cup grated or mashed boiled potato,
  4. 1/2 cup 1/2 cup
  5. 1/2 tsp salt,
  6. 2 tbsp .corn flour,
  7. 1/2 tsp elaichi powder,
  8. For Stuffing.....
  9. as required a). Few kaju badam crushed,
  10. as required Few kishmish,
  11. 3 green chilli chopped finely,
  12. as required Some chopped dhania patta,
  13. 1 tbsp crumbled paneer,
  14. as per taste . Lil salt,
  15. 1/4 tsp black pepper powder,
  16. For Gravy Masala....
  17. 1 tbsp oil,
  18. pinch Jeera,
  19. 4 choti elaichi,
  20. 1 pc dalchini,
  21. 1/2 tsp kali mirch sabit,
  22. 1 small onion sliced,
  23. 3 med sized tomato roughly chopped,
  24. 3 green chilli,
  25. 20 kaju,
  26. 1/2 tsp salt,
  27. 6 garlic cloves,
  28. 1 inch ginger pc chopped finely,
  29. 2 tbsp oil,
  30. 2 tbsp desi ghee,
  31. 1 tejpatta,
  32. 1 tsp ginger garlic paste,
  33. 1 tsp Kashmiri red chilli powder,
  34. 1/2 tsp haldi powder,
  35. 1 tsp red chilli powder,
  36. 1 tsp dhania powder,
  37. 1/2 tsp garam masala powder,
  38. 1/2 tsp sugar,
  39. 1/2 cup fresh cream,
  40. As per taste Salt
  41. as required Oil for frying,

Steps to make to make Malai Kofta

  1. For Gravy....a). Take a pan, add oil, heat it. Add zeera, choti elaichi, dalchini & kali mirch sabit, saute it for a sec.
  2. In goes onion, stir fry until pink. Add ginger garlic, saute it for a minute.
  3. Now add tomato 🍅 & kaju, mix it well. In goes green chilli, stir fry it for 2 minutes.
  4. Add 1 cup water, give a stir. Cover it after a boil. Cook it until tomato becomes mushy. Cool it down. Grind it to a fine puree, strain it, keep aside.
  5. For Stuffing....a). Take a mixing bowl, add all the given ingredients.
  6. B). Add salt & pepper powder, mix it well, keep aside.
  7. For Koftas....a). Take a mixing bowl, add all the given ingredients of kofta. Mix it thoroughly till smooth.
  8. Take small portions, roll it, flatten it, fill it with lil portion of Stuffing. Seal the edges, roll it again, make kofta. Prepare all the koftas in the same manner. Keep aside.
  9. Let's make gravy first... a). Take a wok or deep bottom pan, add oil & ghee, heat it. Add tejpatta, saute it for a sec.
  10. In goes diluted ginger garlic paste,, saute it until rawness is released. Add Kashmiri red chilli powder, stir it, add very lil water to avoid burning.
  11. Now add Gravy Masala, add 1/2 cup water, mix it well. Cook it for a minute. In goes haldi, dhania & red chilli powder & also salt, mix it well.
  12. Lower the flame, cover it with the lid, cook it until oil has oozed out. Open the lid, increase the flame, add garam masala powder & sugar, mix it well.
  13. Now add fresh cream, mix it well, cook it covered on low flame until oil has surfaced.
  14. Open the lid now, increase the flame, add 1/2 cup water, stir it. Give a boil. Lower the flame, cover it again, cook it for 3 minutes.
  15. Turn off the flame, open the lid after 15 minutes.
  16. Take a wok, add good amount of oil, heat it. Moderate the flame, deep fry koftas, 2 at a time very carefully till light brown. Make all koftas in the same manner. Keep aside.
  17. Take a dish, add gravy & kofta, garnish it with fresh cream & slitted green chilli.
  18. Can be served along with Tandoori Roti, Naan or Lachcha Paratha...
